Squires CMC Cellulose Gum Powder

Carboxymethyl cellulose (CMC) is a modified plant cellulose.

CMC is mainly used as a gum in flower paste recipes, and can be used in pastillage work, giving a whiter finish to paste than gum tragacanth. It is an all natural version of the commonly used tylo powder. This useful gum works almost instantly to give strength and pliability to sugar pastes.

Instructions: Add a very small amount of cellulose gum to sugar paste (approximately 5 grams per kilogram of paste) and knead until blended.
